Red Beans (Kidney Beans) with Boiled Rice
How to prepare Red Beans (Kidney Beans) with Boiled Rice and Steamed fresh Vegetables courtesy of Patseasy Recipe

  • 1 cup DRY red kidney beans
  • 1 large onion
  • 3 cloves garlic
  • Chopped fresh green celery
  • 3 tablespoons extra olive virgin oil (or vegetable oil)
  • 1 tablespoon of butter
  • Royko Mchuzi mix or Maggi cubes (any flavour of your choice)
  • Salt and pepper
  • Tomato paste
  • 1 fresh chopped sweetpepper
  • 2 cups of basmati long grain white rice
  • Water
  1. Wash the beans and put them in a large cooking pot with cold water, soak them overnight. But if you want to cook immediately, soak them with boiled water for 2 hours
  2. Drain the water, add boiled water, bring to boil for 1h 1/2 to 2 hours until tender. Drain and keep the stock aside
  3. In a separate casserole, heat the oil over moderate heat, add chopped onions, crashed garlic, chopped sweetpepper, chopped celery. Cook them together slightely
  4. Add beans, mix delicately with a wooden spoon
  5. Season generously with Royko or Maggi and salt&pepper to taste. Then add bean stock , tomato paste, mix them well
  6. Reduce the heat to low and bring to boil for 10 to 15 minutes
  7. Meanwhile prepare the rice: boil the water and little bit salt to taste and 1 tablespoon of butter in a separate casserole, add rice (before washed), stir then cover with a rid, reduce the heat to low and simmer for 15 minutes
  8. Steam the vegetables (of your choice)
  9. Serve the beans and hot rice immediately, with steamed vegetables
